Homemade Chili

Ingredients:

1 tbsp olive oil
1/2 large white onion, chopped
3 cloves garlic, finely chopped
1 (6 oz) can of tomato paste
1 lb ground beef
1 1/2 tbsp chili powder
1 tsp dried oregano
1 tsp ground cumin
1/2 tsp smoked paprika
1/2 tsp cayenne pepper
Salt & black pepper
1 (28 oz) can crushed tomatoes
1 (15 oz) can kidney or pinto beans beans, drained
Shredded cheddar cheese, sour cream, and sliced scallions for serving

Instructions:

Cut onion into a small dice. Remove and trim any wilted leaves from scallions if any. Slice the scallions crosswise into 1/2 inch pieces.

In a large pot over medium heat, add oil. Add onion and cook, stirring occasionally, until slightly softened for around 5 minutes. Add garlic, tomato paste, stirring to coat vegetables. Add ground beef and cook, breaking up meat with a spoon, until no longer pink.

Add chili powder, oregano, cumin, paprika, and cayenne and a generous amount of salt and black pepper. Pour in tomatoes, beans, and remaining tomato paste and bring to a boil. Reduce heat to medium and simmer, stirring occasionally, until liquid is slightly reduced, around 15-20 minutes.

When chili is ready, season with more salt and black pepper, if needed. Spoon chili into bowls. Top with cheese, sour cream, and scallions. Enjoy!
