Carne Asada Tacos

Ingredients:

⅓ cup extra virgin olive oil
⅓ cup soy sauce
1 tbsp white wine vinegar or red wine vinegar
1 lime, juiced
2 tbsp brown sugar
½ tsp ground black pepper ground
1.5-2 lb skirt steak
Street taco tortillas
Pickled onions
Cotja cheese
Cilantro
Mexican Crema

Instructions:

1. Add skirt steak marinade ingredients to large ziploc bag. Squish bag and move around to mix up the olive oil, soy sauce, white wine vinegar, lime juice, brown sugar, and ground black pepper. Add steak and marinate for 2-24 hours. 30 minutes prior to cooking, pull marinated steak from the fridge and let come to room temperature.

2. Preheat grill to 500 degrees. Clean grill grates before putting the meat on. Cook on one side for 4-6 minutes. Flip and cook on the other side for a couple minutes more until meat reaches desired temperature.

3. Remove from grill and let meat rest on cutting board for 10 minutes, then slice the meat against the grain.

4. Quickly chop cilantro. Top each taco with desired amount meat, pickled onions, cilantro, cotja cheese, and mexican crema. Or add your own favorite toppings, enjoy!
