Roasted Veggie Mashed Potato Bowl with Gravy

Ingredients Needed:
1/4 cup of parmesan cheese
2 tbsp broth concentrate (Any broth concentrate is fine, in this recipe I used chicken)
3 large carrots
1 red onion
½ lb broccoli
6 gold potatoes
Olive oil
3 tbsps of butter
Salt & pepper
All-purpose flour

Serving Size: This recipe makes two mashed potato bowls. If you wish to make more, double the recipe!

Instructions:
1. Preheat oven to 400 degrees and move rack to middle of oven. Wash and peel potatoes and cut into 1 inch cubes. Put the potatoes in a large saucepan and put enough water to cover the potatoes. Cover the saucepan and bring to a boil. Once boiling, uncover and cook the potatoes uncovered until they can easily be pierced with a fork. Keep ⅓ cup potato water, then drain potatoes and return to saucepan.

2. Cut broccoli into 1 inch pieces. Cut red onion into ½-inch pieces. Wash and peel carrots and cut into 1/2 inch slices. Put carrots, onions, broccoli in a bowl and toss with 2 tablespoons of olive oil and season with salt and pepper. Put vegetables on a baking sheet and spread in an even layer making sure none of the vegetables are on top of each other.

3. Roast vegetables in oven until tender and browned in spots, around 10-15 minutes. (Watch closely so broccoli doesn't burn!) Sprinkle vegetables with parmesan then return to oven and roast until cheese is melted  and slightly crisp. Watch closely as it melts fast!

4. In a cup, whisk to combine broth concentrate, ⅔ cup water, and 2 teaspoons flour. Put saucepan with potatoes back on heat, set to medium. Melt 2 tablespoons of butter, then add  potato water and 1 tablespoon oil. Mash potatoes with fork and season with salt and pepper. Transfer mashed potatoes to bowl and cover to keep them warm.

5. Clean out saucepan then add 1 tablespoon butter and melt over medium-high heat. Add broth mixture and bring to a boil over high heat, then lower heat to medium to simmer while stirring occasionally. Cook gravy until reduced and season with salt and pepper.

6. Assemble potato bowls by filling each bowl with mashed potatoes and topping with roasted vegetables and gravy!
