Simple Crispy Corn & Black Bean Burritos
This recipe is simple, but delicious! All you have to do is warm up the corn and black beans on stove top, then start assembling the burritos, topping with cheese, and throwing in the oven for 10-15 minutes or until golden brown and crisp. Doesn't get any easier than that!
This recipe makes two large burritos, but you can easily double recipe to make more and use smaller tortillas to make mini burritos! Feel free to add anything to spice it up as well. I usually serve these with taco sauce and sour cream.
Ingredients:
16 oz can of black beans
16 oz (or 2 cups) of corn
2 10 inch tortillas
2 tablespoons of taco seasoning
1 cup of mozzarella cheese
Recipe Instructions:
Preheat oven to 450 degrees. Lightly oil one baking sheet and warm up medium sized skillet.
Once skillet is warm, put a tablespoon of olive oil in the pan and swirl around. Dump black beans and their liquid into the skillet and lightly mash the black beans with spatula. Dump in the corn and the taco seasoning and stir together and cook until warmed through, pull of heat.
Lay two tortillas down on a flat work surface. Divide the filling and cheese between both tortillas. Fold the sides of the burrito in, then pick up the the edge closest to you and fold it over so it covers the filling while rolling it closed at the same time.
Place the burritos on the prepped baking sheet. Lightly brush tops with olive oil. Put in the oven for 10-15 minutes until golden brown and crisp. Enjoy!
