Bacon Cheddar Rolls
Ingredient List:
1 pound of pizza dough
1/4 cup Parmesan cheese
1/4 cup cheddar cheese
4 slices of bacon
3 tablespoons of parsley
2 tablespoons of butter
Flour
Salt & pepper
Olive oil
1. Preheat oven to 450 degrees and put pizza dough in oiled bowl to come to room temperature.
2. Cook bacon in a medium ovenproof skillet until lightly browned. Transfer to a plate lined with a paper towel. When cool coarsely chop into pieces. Save the bacon fat. Melt 2 tablespoons of butter.
3. On a floured surface, roll dough into a 12x8 rectangle. Brush dough all over with melted butter and season with salt and pepper.
4. Sprinkle all of the bacon, cheddar cheese, 3/4 of the Parmesan, and 3/4 of the parsley on top of the dough. Starting with the long side, roll into a log shape and cut crosswise into 8 equal rolls. In the same skillet used to cook the bacon, put the rolls cut side up and brush tops with remaining butter. Let sit for 5 minutes before baking.
5. Bake on center rack until they puff up and are golden brown. Ovens vary, around 20-25 minutes. When done, brush tops with bacon oil then sprinkle the remaining parsley and Parmesan.
